Ingredients

2 cups milk

¼ cup butter , or margarine

¾ cup sugar

1 ½ tsp vanilla

½ cup biscuit mix

4 eggs

1 cup coconut

Preparation

Combine milk, sugar, biscuit mix, eggs, butter, and vanilla in an electric blender.

Cover and blend on low speed for 3 minutes.

Pour into a 9-inch, greased pie pan.

Let stand for about 5 minutes, and then sprinkle with coconut.

If you really like coconut, you can add more than just the 1 cup.

Bake at 350 degrees F for 40 minutes.

Serve warm or cool.
