Ingredients
6 pears, ripe, firm, peeled and coarsely chopped
5 oz. apricots, dried
1/4 cup fresh ginger, peeled and grated
1/2 cup water
1/4 cup sugar
1 tsp. lemon zest
1 lemon, juiced
1 cinnamon stick
1 tbsp. lemon juice
8 oz. nonfat vanilla yogurt
Preparation
Place 4 of the pears with the remaining ingredients (except the lemon juice and yogurt) in a saucepan.
Simmer for about 20 minutes until pears are tender.
Toss remaining 2 pears in lemon juice and reserve.
Remove cinnamon stick from pear-apricot mixture and process in a food processor briefly. Let cool.
Place 1/4 cup into the fruit mixture into parfait glasses, followed by 1/4 cup yogurt and another 1/4 cup fruit mixture.
Top with reserved pears and serve.
