2 lb potatoes, peeled and roughly chopped

3 tbsp unsalted butter

2 cups kale , or green cabbage, chopped

⅔ cup milk

1 cup bacon bits

2 green onions , chopped, or ¼ cup spring onions, finely minced

Salt and ground white pepper , to taste

To serve:

1 tbsp unsalted butter, cubed and chilled

In a medium pot, add the potatoes and fill them to cover with water.

Add salt and bring the water to a boil and then reduce heat to simmer for 40 minutes, or until potatoes are tender.

Drain the water and mash the potatoes while warm. Set aside.

In a medium skillet, melt 3 tablespoons of butter and add the kale and onions.

Saute for 5 minutes, stirring often, or until wilted.

Add in milk and bring this to a simmer.

Pour the hot milk and kale mixture, and bacon bits, into the mashed potatoes. Mix to combine.

Season with salt and pepper to taste. Adjust as necessary.

Serve warm with a tablespoon of butter on top. Best to consume while the butter is slowly melting.
