Ingredients
1 box Beef Rice-a-Roni, (192 g)
1 bag cheese tortellini, tricolor, frozen
3 tbsp tomato tapenade, or Italian style paste
½ cup mayonnaise
1 tbsp red wine vinegar
4 cups roast beef, cooked
½ cup frozen peas
1 raw carrot, sliced thin
½ cup bell pepper, diced
salt
pepper , to taste
½ tsp red pepper, ground, optional
½ cup parmesan cheese, shredded, optional
Preparation
Cook rice according to box directions, and cook tortellini to “al dente” state. Chill.
Mix tomato tapenade, vinegar, and mayonnaise until well blended.
Cut cooked, roast beef into cubes or small chunks.
Add everything together in a large bowl including peas and peppers.
Add salt and pepper to taste.
Mix well, but gently.
Chill for a few hours before serving.
