How To Make Chocolate Truffles
Line and lightly oil a 15 x 10 x 1 baking tray. Combine the butter, sugar and milk in a saucepan and bring to a boil over medium heat. Cook, stirring constantly, until the thermometer reads (112C) 234F. Note: It is important that you use a very good and fast thermometer. When making chocolate and candy, the temperature changes very fast. This is why I use my Thermapen® Professional Thermometer to instantly get an accurate temperature reading. Remove the mixture from the heat. Then stir in the vanilla and the chocolate chips until chocolate is melted. Mix in the marshmallow creme until well combined. Transfer the truffle mix into the prepared tray and refrigerate, uncovered, for minimum of 5 hrs or until firm. Cut the truffle mix into truffle size pieces, form into balls and then roll in the beetroot powder. Store in the refrigerator till needed.

Tips for Making This Easy Chocolate Truffles Recipe
In addition to the beetroot powder, you can also roll the truffles in cocoa powder or finely chopped nuts. Or, you can use all 3 to make a flavourful assortment. To avoid staining your hands red, wear plastic gloves when rolling the truffles in the beetroot powder. The number of truffles this recipe yields depends on how big or small you make them. I am able to make approximately 45-50 truffles per batch.
What is Beetroot Powder?
Beetroot powder is made from dehydrated beetroot that has been ground into a powder. It has a slightly sweet and earthy flavour that pairs especially well with chocolate. It is often used as an all-natural alternative food coloring to give cakes, cookies and muffins a bright red hue. In addition to baked goods, beetroot powder can also be used in sauces, soups, salad dressings and smoothies. One teaspoon of beetroot powder is the nutritional equivalent of one beetroot.

The Thermapen Professional Thermometer
A little bit more about how awesome the Thermapen Professional Thermometer is. Not only does it cover temperatures from as low as -49.9 to as high as 299.9C, it gives you a reading in 3 seconds flat. No waiting around for a couple of minutes with your arm stuck halfway in the oven.
The Thermapen Professional also features a motion sensor mechanism so it comes on with a slight movement but automatically switches off when not in use. So high tech! And it has a really nifty 360° self-rotating display so you can read it at any angle. This comes in handy when I’ve got a stovetop full of pots and need to check the temp on the ones in the back. And I loooooove that you can fold the tip away, which means I no longer prick my fingers when rummaging through the cupboard.
