1 pie crust, deep-dish, pre-made

½ lb bacon, cooked crisp and crumbled

½ lb blue cheese, crumbled

3 large eggs, beaten

1 cup half and half

¼ tsp salt

¼ tsp pepper

¼ tsp ground nutmeg

¼ tsp cayenne pepper

8 oz frozen spinach, thawed and drained

Heat oven to 425 degrees F. Par-bake the pie crust by placing it in the oven for about 5 minutes until just lightly browned.

Reduce oven temperature to 375 degrees F. Scatter the bacon pieces over the bottom of the pie crust.

Sprinkle the cheese crumbles evenly over the bacon.

In a mixing bowl, combine the eggs, half and half, spinach and all spices.

Stir well to combine.

Slowly, pour the liquid mixture evenly over the ingredients in the pie crust.

Bake for 40 minutes until a knife inserted in the center comes out clean.

Let the quiche set for 10 minutes at room temperature.

Slice into wedges and serve.
