Heat oil in a heavy-bottomed skillet. Season the chicken pieces with salt and pepper and cook in the skillet until golden and charred, about 5-6 minutes per side. Transfer the chicken to a plate and turn the skillet to low. Add balsamic vinegar and garlic and cook until fragrant or for 1 minute. Add tomatoes and simmer until soft.Return the chicken to the pan and top with mozzarella cheese slices. Cover the pan with a lid and allow the cheese to melt.Top with torn basil leaves and serve.
