1 lb. bacon, sliced
1 cup apple, peeled, chopped
2 tbsp. sugar
1 ½ cups Original Bisquick pancake mix
1 ½ cups milk
4 eggs
2 cups cheddar cheese, shredded
Heat oven to 375 degrees. Grease an 11x7-inch (2-quart) glass baking dish with cooking spray.
In a 12-inch skillet, cook bacon over low heat for 8-10 minutes, turning occasionally until crisp.
Drain on paper towels and crumble the bacon before setting aside.
In a small bowl, mix apple and sugar. Spread in the baking dish.
In a medium bowl, stir Bisquick mix, milk and eggs until blended. Pour over apple mixture.
Sprinkle with cheese and bacon.
Bake uncovered for 30-35 minutes or until a knife inserted in the center comes out clean. Serve.
