4 boneless skinless chicken breasts
1 medium onion, chopped
Salt
Pepper
1 box Zatarain’s Yellow Rice, (195 g) or any rice of your choice cooked according to package
2 Cups cheddar cheese, shredded , or cheese blend
10.5 oz cream of chicken soup
15.25 oz corn, drained
2 Cups chicken stock
Place chicken into crockpot and season with salt and pepper.
Add chopped onions on top of chicken.
Mix two cups of chicken broth and can of cream of chicken soup in a bowl and pour over chicken.
Cover and cook on low for 7-8 hours or high for 4 hours.
Before serving shred chicken and add rice, corn and cheese.
Mix well and until cheese is melted.
