Ingredients

3 lbs potatoes, around 9 medium, peeled and cubed

8 oz cream cheese, softened

1 cup sour cream

½ cup butter, cubed

¼ cup low-fat milk

1 ½ cups cheddar cheese, shredded

1 ½ cups pepper jack cheese, shredded

½ lb bacon strips, cooked and crumbled

4 green onions, chopped

½ tsp onion powder

½ tsp garlic powder

Preparation

Take out a Dutch oven and place potatoes in it.

Cover with water and bring to a boil.

Reduce heat, cover and cook until potatoes are tender (about 15 minutes).

Drain and mash potatoes with cream cheese, sour cream, butter and milk.

Stir in the cheeses, bacon, onions and seasonings.

Place in a large bowl, cover and refrigerate overnight.

Take out a greased 3-to-4-inch slow cooker and place mashed potatoes inside.

Cook on low for about 3 hours.
