2 cups all-purpose flour, plus more for dusting
2 cups brown sugar
1 cup vegetable oil
1 cup yogurt, or buttermilk
1 cup strong coffee, hot
¾ cup cocoa powder
2 tsp baking soda
1½ tsp vanilla extract
1 tsp salt
2 pcs eggs
cooking spray
For Serving:
1 oz whipped cream
1 tbsp chocolate syrup
1 tbsp chocolate chips
1 tbsp pecans, roasted
Preheat your oven to 300 degrees F. Grease a baking casserole of your choice with cooking spray, dust with flour, and tap to remove any excess.
Sift together the flour, cocoa powder, baking soda, and salt. Set aside.
In a mixing bowl attached to a hand beater, combine sugar, oil, buttermilk or yogurt, vanilla extract, and eggs. Beat until the sugar has dissolved and mixture turns pale and light roughly 8 to 10 minutes.
Fold the sifted flour mixture, followed by the strong coffee until evenly incorporated.
Pour your batter into the dusted baking casserole. Bake for roughly an hour or until a cake tester comes out clean.
Once baked, set aside at room temperature and allow to cool completely.
Portion accordingly. Serve with whipped cream.
