1 cup butter
3/4 cup brown sugar
1/4 cup sugar
1 tsp. vanilla extract
3.4 oz instant vanilla pudding mix
2 eggs
2 1/4 cups flour
1 tsp. baking soda
4 cups semisweet chocolate chips
For the cookies:
Preheat oven at 375° F.
In a large mixing bowl, stir in butter, sugars, vanilla and pudding mix.
Beat until smooth and creamy. Gradually add in the eggs.
Combine flour and baking soda.
While stirring, pour in pudding mixture. Fold in 2 C. chocolate chips.
Use a spoon to drop teaspoon-sized dough balls on greased cookie sheets.
Bake for 9 to 12 minutes.
For the chocolate bottom:
For chocolate bottom, melt remaining chocolate in a microwaveable bowl in microwave for 2 minutes or until chocolates have completely melted.
Dip each cookie bottom in the chocolate and place on wax sheet.
Store cookies in fridge until chocolate is firm.
