Ingredients

6 celery stalks, cut in half crosswise

10 oz clams, drained, liquid reserved, minced

½ cup ricotta cheese, part-skim

1 garlic clove, minced

1 tbsp fresh lemon juice

1 tsp onion, minced

⅛ tsp red, cayenne pepper

3 tbsp dill, or tsp. dried dill weed, snipped

Preparation

Place all ingredients except dill and celery in a blender or a food processor fitted with the metal blade and process until smooth.

Add clam liquid if needed to thin; stir in the dill.

Stuff celery stalks with cheese mixture.
