1 cup brown sugar, packed
1 cup granulated sugar
1 cup butter , softened
1 tsp vanilla
1 egg
2 ½ cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 cup coconut flakes
1 ½ cup cashews, chopped
Heat oven to 350 degrees.
Beat sugars, butter, vanilla, and egg in a large bowl with an electric mixer on medium speed or with a wooden spoon. Mix until creamy.
Stir in flour, baking soda, and salt. Stir in the coconut and the cashews.
Drop dough by 1/4 cupfuls about 3 inches apart onto ungreased large cookie sheets. Flatten slightly.
Bake for 12-16 minutes or until the edges are golden brown. Cool for 2 minutes before removing from the cookie sheets to wire racks to cool completely. Serve.
