1 cup all-purpose flour
1½ tsp baking powder
1 cup pancake mix, of your choice, preferably Bisquick
¼ cup granulated sugar
¼ cup non-dairy creamer powder
1 egg
8 oz lemon lime soda, preferably 7UP®
To Serve:
¼ cup fresh blueberries, per serving
1 tsp powdered sugar, per serving
Sift together the flour, pancake mix, sugar, baking powder, and creamer powder. Set aside.
Mix the egg and lemon lime soda into a mixing bowl until evenly incorporated.
Whisk the flour mixture and soda mixture until evenly incorporated.
Using a griddle or a pan, fry the pancakes until golden brown on both sides.
Serve with any of your favorite accompaniments like pancake syrups (or any fruit flavored syrups), fresh fruits, fruit jams, or butter.
