4 cup potatoes, diced
¼ cup onion, chopped
1 cup Canadian bacon, chopped , or ham
¼ cup chicken broth
2 tbsp. olive oil
¼ tsp. celery seed
½ tsp. freshly ground black pepper
¾ tsp. salt
Place the potatoes into a medium saucepan, and cover with water.
Bring to a boil over high heat, then reduce the heat, and simmer for 5 minutes. Drain.
Then, heat oil in a large skillet over medium heat.
Cook the bacon for 4 minutes, then add in the onion and cook until translucent. Stir frequently.
Add the potatoes, salt, celery seed, and pepper to the bacon; cook 4 minutes, stir occasionally.
Lastly, stir in the chicken broth.
Stir until liquid is absorbed into the potatoes.
