3 lbs. pork shanks

3 tbsp. extra virgin olive oil

¾ cup carrots, grated

2 cups red onions, chopped

¾ cup chicken stock

1 tbsp. rosemary, chopped

½ cup string beans

Preheat oven to 350 degrees Fahrenheit.

Pour 2 tbsp of olive oil into a microwave-safe pot and place in shanks.

Cover pot and place pot in oven for 10 minutes.

After 10 minutes, turn oven down to 200 degrees, place carrots, onions, rosemary, chicken stock, and string beans inside the pot.

Bake for 50 minutes with lid on then another 25 minutes with the lid off.

Remove from oven and place shanks on a pan.

Cover shanks with remaining olive oil then place pan in oven.

Turn oven up to 450 degrees and bake for about 12 to 18 minutes or until shanks are light brown.
