Ingredients
2 tsp. extra virgin olive oil
2 ½ cup farfalle pasta
1/4 cup roma tomato, cubed
1 tbsp. red onion, diced
1 dash kosher salt
1 dash pepper
1 oz. fresh spinach
1/4 cup fresh garlic
2 tsp kosher salt
1/4 cup balsamic vinegar
1/4 cup sweet white wine
1 cup extra virgin olive oil
Preparation
Mix all the ingredients for the fresca sauce.
In a pan, add all the pasta ingredients except the spinach.
Sear noodles, stirring occasionally until steaming hot.
Add the spinach and 1 oz. of the fresca sauce.
Toss to combine and serve with parmesan cheese.
