Ingredients
5 oz carrots, grated
3 tbsp ginger, fresh, minced
8 tbsp olive oil
6 tbsp rice vinegar
1¼ tbsp miso paste
2 tbsp water, add more as needed
salt and ground black pepper, to taste
3 oz cucumbers, per serving
3 oz apples, per serving
2 oz tomatoes, per serving
2 oz lettuce, per serving
Preparation
Place all ingredients in a blender or food processor and puree until smooth. Add water as necessary to achieve your desired texture.
Season to taste with salt and pepper. Adjust accordingly.
Serve 3 tablespoons of dressing over salad.
