¾ lb ground beef

2 tbsp onion, chopped

⅛ tsp garlic powder

8 oz tomatoes, drained but reserve ½ cup liquid

8 oz corn, drained

½ tsp chili powder

1 egg

½ cup cornmeal

½ cup cheese, shredded

salt, to taste

Crumble the ground beef into a microwave-safe baking dish. Add onion and garlic.

Loosely cover the baking dish and microwave on high for 2 minutes.

Break up the beef and stir. Cover and microwave on high for 2 to 3 minutes until the beef does not appear pink. Drain excessive fat.

Stir in corn, tomatoes, olives, chili powder, and salt.

Microwave for 4 to 6 minutes until hot and bubbly.

Beat the egg in a bowl, stirring in the cornmeal, and reserve tomato liquid.

Pour the egg mixture over the meat and sprinkle cheese on top.

Microwave on high for 3 to 6 minutes until topping is no longer doughy.

Top it off with more cheese and savor a crumbly Corn and Beef Pie!

1 small garlic clove finely chopped instead of garlic powder 12 olives pitted green or black, sliced Paprika, for eye appeal
