Ingredients

4 slices brioche bread, or white or country bread, ½-inch slices

1 cup unsalted butter, at room temperature

1 cup cottage cheese

⅔ cup granulated sugar

2 tsp ground cinnamon

⅛ tsp salt

Preparation

Line your baking sheet with a silicone mat. Preheat your oven to 430 degrees F.

For the cinnamon toast, combine the sugar, cinnamon, and salt in a mixing bowl. Stir to evenly incorporate and set aside.

Spread roughly 1½ tablespoons of butter on both sides of your bread slices. Sprinkle the buttered slices with your cinnamon sugar to coat.

Place onto your lined baking sheet. Bake for roughly 5 to 8 minutes until the edges start to turn golden brown & butter is foamy.

Flip and do the same on the other side on your slices, and bake for another 3 to 5 minutes.

Once baked, set aside at room temperature and cool down until warm enough to handle.

Spread roughly ¼ cup cottage cheese per toast. You may serve as is, or lightly caramelize the cottage cheese with a culinary torch. Serve!
