¾ all-purpose flour
¾ cup cottage cheese, preferable low fat and small curds
1 tbsp granulated sugar
¼ tsp baking powder
⅔ cup milk
2 egg whites, large
5 tbsp vegetable oil
To Serve:
1 tbsp cottage cheese
1 tbsp butter
1 tbsp agave syrup, or jams, compotes, syrups, butter, or fresh fruits of your choice
Sift together flour, baking soda, and baking powder. Set aside.
In a mixing bowl, combine egg whites and sugar. Whisk until egg whites have doubled in volume and sugar has dissolved.
Add cottage cheese, milk, and vanilla extract. Continue whisking.
Fold in the flour mixture into the egg white mixture until evenly incorporated.
Heat up a skillet with oil over medium heat. Measure out about ½ cup of the batter and cook until bubbles form on top. Flip and cook until lightly browned.
Serve with any combination of syrups, butters, or fruits, and enjoy!
