Ingredients
½ cup onion, chopped
½ cup celery, chopped
6 oz dried beef, cut into bite size pieces or 2 pkg.
½ cup butter
½ cup flour
5 cup half and half
2 egg yolks
2 cups milk
2 cups flour
1 tbsp baking powder
½ tsp salt
⅓ cup oil
2 egg whites, stiffly beaten
Preparation
Cook onion and celery in a microwave-safe bowl, on high for 3 to 4 minutes until tender. Set aside.
Brown beef, in a large skillet or saucepan, on high heat, until its browned and looks like half the amount.
Add onion and celery, stir to combine.
Cook for about 1 minute.
Cook and use a whisk and slowly add all of the half n half.
Continue to cook, while using the whisk, until thickened and smooth (about 4 to 5 minutes).
Do not add salt until creamed beef is thickened, then add salt and pepper if needed.
Preheat waffle maker.
Put all of the ingredients into a large mixer bowl, except the beaten egg whites.
Beat on low until moistened. increase to medium, mix until smooth.
By hand fold in the egg whites.
Pour a ½ cup of batter into the center of the grid.
Close waffle maker, bake until golden (3 to 3 ½ minutes).
Be sure to grease the grid now and then between baking waffles, to make sure they don’t stick.
Serve hot with creamed beef.
