1 pkg meatballs, frozen

1 tbsp olive oil

1 onion, diced

2 cups cauliflower , cut into florets

2 tbsp butter

3 tbsp flour

1 cup milk

Salt, to taste

Pepper , to taste

1 tsp nutmeg

2 cups cheddar cheese, shredded

Preheat oven to 350 degrees.

Prepare meatballs according to packaging directions and set aside.

In a large skillet, heat oil and sauté onions until translucent.

Add cauliflower and sauté for a few more minutes.

Add butter and allow to melt completely.

Sprinkle in flour and mix well. Slowly pour in the milk and season with salt, pepper, and nutmeg.

Bring to a boil and immediately reduce heat to a simmer.

Add in about ½ cup of your cheddar cheese and simmer for about 8 minutes as the sauce begins to thicken.

Arrange meatballs in a greased baking dish and evenly spread veggies and sauce over.

Top with remaining cheese and bake for 20 to 30 minutes until bubbly and golden. Serve.
