This light, refreshing and creamy rocket and watercress soup was just the thing we needed after a week of over indulgence. Especially a week which involved a fab five course fortieth birthday party (where I met the coolest jazz musician in town), a three course supper with a whole load of cheese, testing about three different doughnut recipes (oh yeah), and a girly catch up that involved five different types of cake. Cue lots of very long walks to burn off the calories, trampoline jumps and endless bowls of healthy soups like this one.
This soup with a simple base of onion, potato, rocket and watercress is very easy to make in my Multicooker Redmond. But don’t be fooled by the small list of ingredients. It packs a huge punch in terms of flavour. Plus watercress is a super food with lots of anti-oxidants, vitamins, iron, calcium and fibre. This is a soup you want to have in your life. In the last few weeks, I have been experimenting with a lot of soups and some summer slow cooking in mine. Actually, I’m finding it better to use the multicooker for this kind of thing than a slow cooker – with this multicooker you can do everything in one pot, much easier!
