15 oz chicken breasts, boneless, skinless, chopped
10 oz zucchini, medium, cut into strips lengthwise
5½ oz yellow onions, chopped
1 cup button mushrooms, white or brown, quartered
1 tsp lemon zest
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme
2 cups chicken broth
salt, to taste
ground black pepper, to taste
In a large slow cooker, combine together the chicken, onion, mushrooms, lemon zest, basil, oregano, and thyme.
Pour the chicken broth over the chicken mixture.
Cook on Low for 6 to 8 hours until the chicken is cooked through.
In the last 2 hours of cooking, stir in the zucchini strips. Season to taste with salt and pepper, and adjust accordingly.
Continue cooking until done. Serve and enjoy!
