Ingredients
1 lb boneless chicken breast
2 carrots, diced
2 stalks celery, diced
1 onion, diced
1 red pepper, diced
2 potatoes, cubed
¾ cup peas
1 cup baby spinach
2 cloves garlic, minced
5 cups chicken broth
1 cup heavy cream
1 bayleaf
1 tsp red pepper flakes
1 pinch salt, or more to taste
1 pinch pepper, or more to taste
2 cups cheese tortellini
Preparation
Pour everything minus the tortellini into the crockpot.
Cook it on a low heat for 5-6 hours. Take out the chicken and shred.
Add the shredded chicken back into the crockpot with the tortellini.
Cook for another 15 minutes and then serve warm!
