Ingredients

1½ tsp Da Hong Pao loose leaf tea

4 cups water

Preparation

Preheat the teapot and teacup or traditional gaiwan. To do this, fill each vessel with hot water, rinse, and then discard the water.

Place the loose leaf tea leaves in a tea strainer.

Heat water to between 95 and 205 degrees F and pour into a gaiwan (Chinese lidded cup) or teacup.

Set the strainer with the tea leaves in the cup and steep for 1 minute.

When steeping is done, remove the tea strainer and enjoy.
