2 cups sugar
1 ¾ cups all-purpose flour
3/4 cup cocoa powder
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup strong coffee, boiling hot
Heat oven to 350 degrees. Grease and flour two 9-inch round baking pans or one 13x9x2-inch baking pan.
In a large bowl, stir together sugar, flour, cocoa, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla. Beat with an electric mixer on medium speed for 2 minutes.
Stir in boiling strong hot coffee. The batter should be thin.
Pour batter into prepared pans. Bake 30 to 35 minutes for round pans or 35 to 40 minutes for rectangular pan, or until wooden pick inserted in center comes out clean
Cool in the pan for 10 minutes. Transfer from the pan to a wire rack to cool completely.
If you made 2 round cake layers, stack the cake layers first. Frost with your favorite frosting of choice and serve.
