Whilst this recipe is made using home cooked beetroot, please do go ahead and get store bought pre cooked beetroot (make life eaaaaaaaaaasy). Just make sure to get pre cooked beetroot that is stored in water (instead of vinegar) for this.

Having gained widespread popularity around the world, various regions have come to adding in their own staple ingredients and unique garnishes like chopped tomato, cucumber, olives and olive oil, parsley, paprika, pine nuts, caramelized onions, mushrooms, and even hard-boiled eggs.

How To Make Beet Hummus
Add all the ingredients into the food processor.Whizz them into a paste.Check for seasoning and lemon juice and add a little more if necessary.Transfer into a bowl and serve with crackers or crunchy vegetables and enjoy.

Delicious Variations
Add more heat – feel free to add extra cayenne or red pepper flakes for heat.Roasted beet hummus – to make Roasted Beet Hummus, simple roast some raw beets and cook as normal. Make it raw – to make this a raw beetroot hummus dip you would simply substitute the cooked beetroot for a smaller approx (250g peeled and chopped raw beetroot) and blend it all in the food processor.
Storage
Refrigerate – store in an air tight container in the fridge for up to a week.Freeze – Put in an air tight container, (almost to the top of the container, cover with a thin layer of olive oil and then freeze for up to 3 months.Thaw – Thaw overnight in the refrigerator. Add on a drizzle of olive oil and stir before serving.
