Tips for Making Chinese Chicken Salad

This salad is sooo versatile. A few tips:

Make sure you squeeze the liquid out of the carrots so that you don’t get excess liquid diluting that lovely salad dressing. Use a mandolin to julienne your vegetables, but you can use a knife / grater if you don’t have one. You can use turkey instead of chicken if you would prefer. Add more chicken or veggies to your taste.

Meal Prep And Make Ahead

Prep Ahead

Feel free to prep the chicken a few days ahead of time and keep it in the fridge.  Here is an easy recipe for cooked chicken, like Instant Pot Chicken Breast  The salad dressing can last for up to a week in the fridge. For a crunchier salad, add the Asian Salad Dressing just before serving. You can add the dressing a f ew hours beforehand – but the salad will lose its crunch.

Save Time

Use a bag of pre shredded veggies. Use store bought cooked chicken. Start with store bought cooked noodles.
