Sooooooo excited, that when I found the first patch just peeking through the soil, I actually drew a map to make sure I knew exactly where to start looking the following week. Thing is, Freddy and I actually planted said wild garlic in the woods a few years ago and I am pretty proud that we now have an entire bed of it in the spring as and when I need. Oh the joy. Yeap it is all about the ramps falafels right now.

What is Ramp (Wild Garlic)?

Here, we call this foodie delight Ramps  (I hear there is even a ramps festival in New York.) But it is also called wild garlic in the uk.  Some people call them wild leeks or wild onions. Whatever you call it, this yummy treat is like a flavour mixture of garlic and onion. Why all the wild garlic/ramps/whatever you want to call it love? Well because they’re rather scarce because they are wild grown. (And there are people like me mapping out their exact locations in the woods so we can eat all of them.)

Reason Make Easy Falafel Recipe With Ramps

They are pretty easy to make with pantry staples. They are filled with ramps (wild garlic). Yeah – that makes them pretty much perfect already. They are vegan and gluten-free – yeap only chickpea and almonds, no flour in these little beauties. They can be made ahead and quickly warmed up as needed – time-saving or what? And the spices in these are pretty much adaptable – add tastes that you like and as much as you like. You can simply omit the wild garlic if you don’t have any or prefer not to use it.

Falafel Recipe Baked Or Fried

Is it better to bake or fry falafel? Well, it is up to you. You can fry them if you prefer. But baking them make into a Healthy Falafel Recipe. Even more perfect, right?

Easy Falafel Recipe

So this Easy Falafel Recipe is just that – easy and simple. It is made with just 10 ingredients (although you can add extra spices or flavour to your taste) and is mostly made in a food processor. The actual making time is very very short.

Step 1. Whiz chickpeas, ramps (wild garlic if using) and onion into a food processor until coarsely ground. Step 2. Then add the oil and pulse until finely chopped but not mushy. Step 3. Transfer the falafel mixture to a bowl and add in all the rest of the ingredients and mix well, adjust seasoning and refrigerate for 1 hour. Step 4. Wet your hands and roll about 2 tbsp of the falafel into a small ball and transfer to the baking tray. Repeat with the rest of the mixture until all done. Step 5. Spray the falafels with some olive oil and bake for about 25 mins until golden brown and done.

So, goodbye boring lunches or questions about what to do with wild garlic, or even how can I make falafels. This method is foolproof. Honest, it works every single time to give you falafels that are full of flavour and tender on the inside and golden and crunchy on the outside. Yes, every single time.

What to Serve Alongside Your Ramps Falafel Recipe

These baked Easy falafels are oh so versatile in what you do with them. Eat them straight up dipped into a Tahini Dressing, stuff them in some 5 min yoghurt flatbreads packed full of pickles, salad and hummus. Or complete your roasted veggie loaded bowl with a falafel or two. The current favourite in my house is the falafel bowls, hands down.
