Recipe Tips And Variations

For the best results, prepare steaks for the grill. So start with room temperature steak. So if refrigerated, remove them and let them rest for 30 minutes at room temperature. The colder the meat is, the longer it will take to cook, which can mean overcooking.Make sure your steak is dry before you cook it, as dry meat forms the best crust.I like to keep some fat on the steak when cooking for extra flavor.Make sure the steaks rest before slicing, so the juices redistribute and it finishes cooking.Season meat just before grilling. If you season ahead of time, the seasoning will draw out moisture, and you won’t get that perfect crust. For a smoky flavor, you will get the best results using a charcoal grill or wood fire grill. My partner believes flipping the steak a few times during cooking allows for more even cooking. But if you do more flipping, you tend not to get as pronounced char marks. Try both ways and see what you prefer.Sirloin steak can dry out quickly if overcooked, so keep a close eye on it during cooking.Season generously. If using only salt, plan for about one teaspoon per pound of meat. If using steak seasoning, you can start with two teaspoons per pound.Sometimes you can just season with simple salt and pepper.Alternatively, you can use the best steak marinade you know of.Make sure to slice the steak against the grain before serving. For best cooking results, be sure to use oiled grill grates or grill pan and make sure they are clean. I tend to use olive oil for this.

Storage

Store – Leftovers can be stored in an airtight container in the fridge for up to 4 days. Freeze – It is best to freeze uncooked steak. Wrap individual steaks with plastic wrap, then place them in a freezer bag and freeze for up to 3 months (try and keep them with minimal temperature fluctuations). Thaw – Defrost uncooked steaks overnight in the fridge.

Steak Grill Time

How long to cook steak on the grill depends entirely on the steak cuts and your desired level of doneness. Thick cuts will need longer than thin cuts. Below is a guide for how long to grill steak medium rare (common cuts). Cook time will need to be a few minutes less for rarer, and a few minutes more for well done. Check the internal temperature of the meat using a fast-read thermomether. It should read between 130-135 degrees F / 54-57 degrees C for medium-rare steak.
