Variations
Use the potatoes you have on hand or your favorite. Yukon gold, red potatoes, or Russet potatoes.Chicken stock, chicken broth, or vegetable broth all work. You will get more flavor from homemade chicken stock.Leftover ham or ham bone works great! Or you can purchase a ham steak or already cubed ham.Stir in some shredded cheddar cheese if desired. Remove the pot from the heat and add about 1 cup of shredded cheddar cheese.Add some sour cream for a bit of tanginess.

Use leftover ham bones to make ham broth for ham soup. It’s as easy as making any broth. Place the ham bone in a stock pot, add water enough to cover the ham bone, and bring to a boil. Reduce the heat, cover with a lid, and simmer for about 1 hour or until fragrant. Replace the chicken stock with your homemade ham stock.
How to Make Ham and Potato Soup
In a large dutch oven or stockpot, melt the butter over medium heat. Add the carrots, celery, and onion; saute until translucent, about 8-10 minutes. Add the garlic, fresh thyme, and bay leaf and cook until fragrant, about 1-2 minutes. Sprinkle the flour over the vegetables and cook for 1-2 minutes. Slowly add the milk while whisking constantly. Add the salt and pepper. Stir in the cooked ham, potatoes, and corn. Bring to a boil, reduce the heat and simmer for about 10-15 minutes until the potatoes are tender. Once the potatoes are tender use a potato masher to mash about 1/3 of the potatoes or to your desired creaminess. Don’t worry it won’t break the ham cubes too much. Garnish with chopped parsley or even shredded cheddar cheese.
