Ingredients

12 oz tomatoes, preferably Roma’s, chopped

3 tbsp red onion, chopped

1½ avocados, chopped

3 corn tortillas , or flour tortillas, 8-inch

15 slices cooked ham, roughly 11½ oz total

1¼ cups arugula

¾ cup Monterey Jack, or Pepper Jack, or Mexican cheese of your choice

sour cream, to serve

tomato salsa, to serve

Preparation

Divide the ham equally between each tortilla and top with equal portions of the vegetables & cheese.

Fold the wrap and cut in half to serve.

Serve together with sour cream & tomato salsa.
