Put chocolate in a heatproof bowl that fits inside the Instant Pot insert. Put the milk chocolate in a separate heatproof bowl that also fits in the Instant Pot insert. Add 1 cup of water into Instant Pot insert, select the sauté button, and set to less heat. Once it heats up, use your Instant Pot as a double boiler by placing your bowl of white chocolate over the Instant Pot. The bottom of the bowl should fit inside the top of the pot and the wider top should not. Stir periodically until chocolate is fully melted. Remove the bowl. Coat chocolate molds with melted chocolate and set it by placing the molds in the freezer.Remove the candy shells from the molds.Using a warm pan, melt the edges of the chocolate to make them smooth and even.Fill one half of the chocolate shell with the cocoa mix, candy bits, and mini marshmallows.Slightly melt the edge of an empty shell and then press it on top of the filled shell. Expert Tips
Melt the chocolate slowly using a double boiler or in 15-second increments in the microwave.Check the molded chocolate for thin spots, especially around the mold’s edges, and re-coat with more chocolate if needed. When assembling, wear food-safe gloves and dip your fingers into ice water as needed to avoid melting the chocolate or leaving fingerprints.Don’t forget to decorate! Drizzle the bombs with melted white (or colored chocolate to match different seasons and holiday) and top with crushed candy, sprinkles, or cookie crumbles.
Delicious Variations
Dark Chocolate – Use dark chocolate chips and dark chocolate cocoa mix in place of the milk chocolate in the original recipe.Pumpkin Spice – Who doesn’t love pumpkin spice? Add a sprinkle of pumpkin spice to the cocoa mix before filling the bombs.Cookie Crumbles – Cookie crumbles added inside and as a garnish provide a sweet element of crunch. Oreos are one of my favorites but just about any cookie crumbles will work.Mocha – Add a teaspoon of instant coffee or espresso for a coffee-flavored burst of caffeine.
Make Ahead and Storage
This peppermint chocolate bomb recipe is perfect for prepping ahead.
Make Ahead – Prepare several chocolate shells in advance and store them for filling at a later time. This makes prep quick and easy. The entire recipe can also be made in advance.Store – Heat is the enemy of chocolate so store these in an airtight container (or cellophane bags for gifting) in a cool part of your kitchen for the best results. These can be stored in your fridge but it’s probably not necessary. If you do, remove them from the fridge well before serving so the melting effect is more dramatic.Freeze – Generally, freezing these is not necessary as freezing won’t really make them last any longer.
FAQs
Can I Use Other Types of Chocolate?
You can use any type of chocolate chips or candy melts to make this recipe, although I think chips have a better flavor than the candy melts. Try using dark chocolate, white chocolate, or even peanut butter or butterscotch chips.
I Don’t Have a Candy Mold
Using a silicone candy mold is certainly the easiest way to make these chocolate bombs. But, you can try making them by wrapping the bottom rounded half of an egg with plastic wrap and then dipping it in the melted chocolate. You may need to dip it two or three times to get the chocolate thick enough so that it doesn’t crack when you remove it from the egg.
