What Is Swiss Steak?
Don’t let the name fool you, this Pressure Cooker Swiss Steak has nothing to do with being from Switzerland. A Swiss Steak is called that because of the method in which it’s cooked. You slowly cook your tougher cut of meat, bringing out all the flavor. Then brown it and braise it in a tomato sauce.
Ingredient Notes
Steak – this recipe uses bottom round steak which is a cheaper tougher cut of steak and perfect for pressure cooking. Spices – this easy stew gets its flavors from garlic powder, onion powder, paprika, salt and pepper. Adjust quantities of spices to your taste.Onion – you can use white, yellow, or red onions.Mushrooms – I used baby mushrooms, but you can use other mushrooms that you have.Celery – A great flavor enhancer.Broth – for best results and flavor use low sodium beef broth. Vegetable and chicken broth will work too.Olive oil – for browning the steak. Use other vegetable oil, sunflower oil, avocado oil too.Tomatoes – this uses diced tomatoes but feel free to use crushed tomatoes too.
How To Make Instant Pot Swiss Steak

In a shallow bowl, combine the garlic powder, onion powder, paprika, sea salt, and black pepper.Season the sliced round steak on both sides with the seasoning mixture.Press sauté on the Instant Pot, and when it reads hot, add the oil.Once the oil is simmering, brown the steak on both sides, then place on a plate and cover with foil. Work in batches if needed.Add the diced onion to the Instant Pot and cook for 1 min. Add the sliced mushrooms and celery, and cook just until slightly soft, stirring occasionally for 2-3 mins.Add a third of the beef broth. Using a wooden spoon, scrape the bottom of the pot to deglaze it.Press cancel to turn off the sauté mode and add the round steak back to the pot. Add the remaining beef broth and top with the crushed tomatoes. Make sure to NOT stir the tomatoes into the broth.Cover with the lid, lock it, turn the valve to sealing position, and pressure cook for 20 minutes. Once cooked, allow for a 10-minute natural pressure release, then do a quick pressure release to remove the remaining pressure.Open the lid, remove steak, and place on a large platter. Cover with foil.Press sauté and boil the gravy mixture for 10 minutes to thicken it and reduce it.Garnish with chopped parsley and serve over mashed cauliflower with the gravy on top.
Make This In A Slow Cooker
Combine the spices and season the steak.Brown steak in a skillet with some oil and remove and add into a slow cooker followed by the remaining ingredients.Cook on low for 7-8 hours or on high for 4-5 hours or until the meat is fork tender.Serve.
Recipe Tips
Cooking time does not include time for Instant Pot to come up to pressure or for the pressure to release.Make sure to deglaze the pot in step 6 to avoid getting a BURN notice. Try using my Best Dang Steak Seasoning on the Swiss Steak in place of the seasonings listed. Do NOT mix or stir the tomatoes into the broth as this will cause a BURN notice. If not low carb, you can thicken the sauce by using a cornstarch slurry at the end.
