2 chicken breasts, sliced lengthwise
1 tsp. garlic, minced
1 tbsp olive oil
2 cups spinach
⅓ cup mayonnaise
¼ cup fresh parmesan, grated
¼ cup mozzarella , shredded
Salt and pepper, to taste
Preheat the oven to 425 degrees.
Lay the chicken on a flat surface and pound it flat.
In a large skillet, saute the garlic with olive oil for a few minutes.
Add in the spinach and saute for a few minutes, until it begins to wilt. Remove from heat.
Stir in the mayo and cheeses to make a spread.
Season the chicken with salt and pepper on both sides.
Spread a layer of the mayo-cheese mixture onto each chicken strip and top with the spinach.
Roll up the chicken strips and place them in the oven for 25-30 minutes until cooked through.
Let the chicken cool a few minutes before slicing it into rolls to serve.
