Ingredients
3 large egg yolks
1 can sweetened condensed milk
2 tsp lime zest, finely grated
½ cup key lime juice
½ cup heavy cream
1 graham cracker crust, prepared, 9-inch
½ cup sugar
4 egg whites
Preparation
Preheat the oven to 350°F.
Combine the egg yolks and condensed milk in a medium-sized bowl.
Whisk in the juice, zest and cream. Stir thoroughly.
Pour the filling into the graham crust. Bake for about 30 minutes, or until the filling firms up.
In another medium bowl, beat the egg whites until stiff peaks form.
Add in the sugar and beat again to combine well.
Spread the meringue mixture over the pie.
Bake again for 10 to 12 minutes until the meringue turns golden.
Let cool slightly and serve warm.
