Preheat air fryer to 375F / 190C In a large bowl, mix together coconut milk, stock, Garam masala, curry powder, garlic puree, turmeric, salt and pepper Add in the vegetables and mix till coated. Transfer to deep dish at least 4-inch side and place in the hot Air Fryer. Cook for 12-15 mins till cauliflower is cooked, stirring a couple of times during cooking.
How to Make Cauliflower Curry on the Stove Top
In a large bowl, mix together the stock, Garam masala, curry powder, garlic puree, turmeric, salt and pepper Add in the vegetables and mix till coated. Transfer to a pot and bring to a boil and then cook over medium heat till the cauliflower is tender (but not mushy). Stir in the coconut milk and cook till it is heated through. Adjust seasoning and serve.

Wanted this to be light on calories, so used mix of stock and coconut milk, but you can use a little bit more coconut milk if you prefer. You can easily add more spices or different spices to your taste. Don’t be shy with spices if you like them.
