Ingredients

3 ½ cups figs, peeled, mashed, fresh

3 cups sugar, or Splenda

¼ cup lemon juice

3.3 oz strawberry Jell-O, regular or sugar-free

Preparation

Cook figs, sugar (or Splenda) and lemon juice 5 to 7 minutes.

Let stand overnight.

Stir in Jell-O and bring to a boil and boil 3 to 4 minutes, stirring frequently.

Ladle into sterilized jars leaving 1/4-inch head space.

Remove air bubbles.

Wipe rims.

Cap and seal.

Process in a water bath canner for 10 minutes.
