1 lb carrots, (or 2½ cups), sliced, or baby carrots
1 tbsp olive oil, or butter
¼ tsp kosher salt, plus 1 pinch
1½ tbsp chives, chopped, or minced green onion tops
½ tsp maple syrup, optional
ground black pepper, to taste, optional
Start a saucepan of water to boil.
Peel and slice the carrots into ¼-inch slices on the bias (diagonally).
Once the water is boiling, add the carrots. Boil carrots for 4 to 5 minutes until just crisp tender (longer if more tender dish is desired). Drain.
Toss the carrots with the chives, butter and salt. Taste and add additional salt and pepper, if desired. Enjoy!
