Ingredients
½ lb unsalted butter, chilled and roughly chopped
½ lb semi-sweet chocolate, roughly chopped
4 eggs, whole
4 egg yolks
½ cup brown sugar
1 tbsp cake flour
2 tsp salt
2 tbsp powdered sugar, add more if necessary
3 mint sprigs, add more if necessary
3 strawberries, add more if necessary
Preparation
Place the butter and chocolate in a double boiler or metal mixing bowl over simmering water. Heat the butter and chocolate until they melt.
While the chocolate is melting, combine the whole eggs and egg yolks in a mixing bowl and whip them for 5 to 6 minutes until they slightly thicken.
Add the sugar and salt to the egg mixture and whip for 1 minute to blend them well.
Once the chocolate and butter have melted, lightly whip them together until a smooth mixture is formed, then add them to the egg mixture.
Fold in the flour and combine it well with the chocolate mixture, then pour the mixture into a well-greased and floured ramekin up to about half an inch from the top.
Place the mixture in an oven heated to 400 degrees F and bake it for 12 to 14 minutes.
Once it’s done baking, remove the cake from the oven and let it cool for 1 minute.
Transfer the cake onto a serving plate side down and serve it with ice cream. Feel free to garnish it with fresh fruit, chopped nuts, or whipped cream. Enjoy!
