4 oz cream cheese, softened

½ cup Greek yogurt

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup Colby-Jack cheese, shredded

½ tsp garlic powder

½ tsp sea salt

¼ tsp ground black pepper

6 tbsp butter, softened

12 slices white bread

In a medium mixing bowl, use an electric mixer to beat together the Greek yogurt and cream cheese until fluffy.

Stir in the cheddar, mozzarella, Colby-Jack, garlic powder, salt, and pepper.

Spread a dab of butter across one side of each bread slice.

Place 6 bread slices buttered-side-down onto a clean work surface.

Spread each slice with about ½ cup of the cheese mixture.

Press the remaining 6 slices of bread atop the cheese filling, buttered-side-up.

Warm a large skillet over medium-high heat.

Place the sandwiches in the skillet and grill each side for 2 to 3 minutes until the bread turns golden-brown and the cheeses are fully melted, working in batches if necessary.

Slice each sandwich in half diagonally before serving.
