1 ½ cups flour
1 tsp cinnamon
1 tsp baking soda
½ tsp baking powder
½ tsp ginger
1 pkg mixed dried fruit, (1.5 oz)
1 cup yogurt
1 egg
¼ cup apple juice concentrate
2 tbsp oil
Preheat the oven to 350 degrees F and grease pan with cooking spray.
Chop the package of dried fruit.
Mix the dry ingredients in a bowl and then add the chopped fruit.
In a separate bowl, mix the yogurt, egg, oil, and apple juice concentrate.
Make a well in the center of the dry ingredients and pour in the wet ingredients.
When the ingredients are well blended, spread the batter into the prepared pan.
Bake for 50 minutes and let the bars cool before cutting and serving.
