Specifically, about tropical mocktails (African recipe alert) like this ginger beer hibiscus mocktail. This is the sort of mocktail that takes you back to somewhere in the tropics (Sierra Leone, Sierra Leone), with hot sunny days, cool breezes, white sands that stretch as far as the eye can see and warm turquoise blue water. Ok, so with summer in the UK you might be in less of a tropical daydream mode, but it never hurts to add this ginger beer hibiscus mocktail to your bbq, picnics and summer party drinks repertoire as every little helps right? Especially as it suitable for both the grown-ups and the kiddoes. But hey, when the kids go off to bed and only the grown-ups remain, you can crank up the tropical beats, shake it all about and add in a drop or two of rum to the mocktail. So, so, sooooooo good.

This ginger beer hibiscus mocktail was supper easy to come up with. It was a ‘let me put some of my current favourite things together in one glass, sit back, relax and dream of home’ kind of recipe creation moment. So in went the ginger beer, hibiscus syrup, limes and passionfruit. Plus, the strawberries because I had lots of them lying around. Two attempts and a whole load of tasting later and the perfect mocktail was created. I may have drunk a few gallons of the stuff in between photographing them and writing this post.
