Hmm… I may have dreamt that. But just in case I didn’t, I probably should test it out. Does anyone want to join me? While we’re at it, we probably should test Christmas cookie-flavoured foods as well, like these Gingerbread Buckwheat Waffles. I made these the other morning and they were devoured by my tiny housemates (and so he doesn’t get mad, one not-tiny housemate, OH) in approximately 5.5 mins. They weren’t involved in the no-calories-because-it’s-Christmas-cookie-flavoured test, but I’ll take the quick consumption and the ‘are there any more?’ questioning as a positive sign. These Gluten free Gingerbread Buckwheat waffles are goooood.  

Gingerbread Buckwheat Waffles = Christmas

I don’t know about you, but gingerbread spice is one of those dreamy aromas that transports me right to Christmas. The lights, the tree, the decorations, the presents, and the most important thing of all – cherished family and friends. That’s the good stuff right there. Every Christmas I want to bottle up that moment and live it forever. Because I can’t do that, I have to rely on what reminds me of Christmas to pull up those Christmas memories in my mind. (If I could put up Christmas decorations in July, I probably would.) These waffles just happen to be the perfect vehicle for a Christmas memory extravaganza.

Why You’ll Love These Gingerbread Buckwheat Waffles

They’re delicious. They’ll transport you right to Christmas. They’re sweet without being too sweet. They’re not just sugary sweet waffles – they’re sweet-spiced waffles. You can adjust the buckwheat flour to your liking. Buckwheat flour has an intense and earthy flavour which I love, but some prefer a little less of it. See #1. I wouldn’t dream of ruining Christmas memories with anything other than perfect waffles, and these spiced waffles are pretty much perfect.

How to Serve These Perfect Gingerbread Spiced Waffles

I like to top Gingerbread Buckwheat Waffles with gorgeous red strawberries (red, by the way, is my favourite colour) or perfectly juicy fresh figs, plus a dusting of powdered sugar. You could also top them with a fruit compote (blueberry compote is a good choice).
