½lbground veal
¾cupricotta cheese
¼cupfresh parsley
¼cupparmesan cheese,grated

1egg,lightly beaten
Preparation
Combine all ingredients in a large bowl, mixing until just combined. Be careful not to overmix.
Preheat oven to 400 degrees F.
Roll meat mixture into about 24 1-inch meatballs.
Place meatballs on a large rimmed baking sheet.
Bake for 20 to 25 minutes, flipping meatballs halfway through, or until cooked through and lightly browned.
Serve with desired pasta and sauce.

Pour about ⅓-inch of oil into a large skillet and heat over medium-high heat.
Add 5 to 6 meatballs to the pan at a time; cook for 1 to 2 minutes on the first side, until browned, then flip and cook for an additional 1 to 2 minutes until the other side is browned.
Remove from the pan and repeat in batches until all of the meatballs are cooked.
Simmer in desired pasta sauce for 15 to 20 minutes to finish cooking and serve with pasta. Enjoy!
