2 tsp lemon juice, fresh
1 tsp olive oil
2 tbsp white wine vinegar
4 cups spinach leaves
2 large tomatoes, chopped
¼ cup goat cheese, crumbled
1 tbsp pine nuts, toasted
salt , to taste
pepper , to taste
Whisk lemon juice, oil, and vinegar together.
Add salt & pepper to taste.
In a large bowl toss spinach leaves with dressing.
Add the tomatoes and goat cheese, mix gently to flavor the entire salad.
