8 pcs sourdough bread, ½ inch thick

4 oz gruyere, emmental or raclette cheese, shredded

4 oz cheddar cheese, grated

⅓ cup mayonnaise

1 tbsp dijon mustard

1 tbsp green onions, chopped

½ cup unsalted butter, softened

For Serving:

potato fries

tomato soup, or should of your choice

Combine all the cheese, mayonnaise, mustard, and chopped onion.

Spread mixture on one side of 4 of the bread slices to within ¼-inch of edges.

Top with remaining bread slices. Spread softened butter on the outer sides of the sandwiches.

Heat up a skillet over medium-low heat. Place your sandwich. Heat until it turns golden brown and cheese has slightly melted, turning once.

Serve with either potato fries or as a side for tomato soup.
